Raw Chocolate Truffles

After making those ridiculously (un)healthy peanut butter squares, I'm trying to steer clear of baking the bad stuff... She says. So instead I went for sugar free no-bake baking and produced these chocolate truffles. The trick? They're not actually chocolates...

It's a rather simple recipe and the only time consuming bit is rolling the mixture in to balls, but it does at least make snacking slightly healthier!
  • 250g dates
  • 1/2 cup cocoa
  • 4 tsps vanilla essence
  • 1 cup roasted peanuts
  • 1 cup sunflower seeds
  • Extra cocoa for dusting


Pit your dates (get a bit sticky in the process..!) and put them in a food processor.
Add the rest of the ingredients to the food processor and blitz them all together.
Keep blitzing for about five minutes as it becomes finely chopped and the oils from the peanuts and sunflower seeds start to bring the mix together to form a dough (of sorts).

Once it is all finely processed, it's time to start squishing the mix in to balls.
Roll out as many small balls as possible, think your standard truffle size! Mine are a bit unevenly shaped and sized, but oh well, you're only going to eat them right?!
Once you have rolled them all out, toss them in some extra cocoa powder so that they really do look like truffles!

They're pretty deceiving until you bite in to them and realise they're not actually chocolates, but at least you know you can grab a couple from the fridge once they're made and enjoy some no added sugar energy. Hopefully with some help of these and my breakfast smoothies I will feel a bit better about the amount of junk I've been eating recently (cake for lunch is not ideal...!).
